This cake is a family recipe, my grandma made it always for us in autumn, during the apple harvest season.
It´s my first vegan alternation of my favorite recipe, which taste just like the original.

Ingredients:
800 grams of apples
cane sugar - amount depends on how sweet the apples are
2x baking powders
100 grams rice flour
100g buckwheat flour
120 grams of crushed nuts
water from 1 can of chickpeas
cinnamon
For topping:
apricot jam
dark chocolate
rice milk
How to do it:
1. grate the apples and mix into them sugar so that they are sweet
2. let them sit for a while so that they release water
3. add cinnamon into the mixture
4. from the can of chickpeas collect the water and whisk it until you get foamy consistency like when you work with egg whites
5. add crushed nuts into the apples and mix it all together
6. add baking powders into the apples and mix it well, it can start a little bubbling process which is ok
7. add flour and mix it up
8. as last mix in the chickpeas foam
9. bake on 180 degrees around 30 minutes
10. after the cake is cool down spread a apricot jam on it
11. melt the dark chocolate, add cane sugar into it (if you prefer sweet chocolate), add rice milk until you get nice liquid creamy consistency
12. pour the chocolate onto the cake
13. eat with love;)
